Turkey Schnitzel with Apricot and Spring Onion Vegetables

The perfect turkey schnitzel with apricot and spring onion vegetables recipe with a picture and simple step-by-step instructions.

  • 300 g Turkey schnitzel
  • 1 tbsp Oil
  • Salt and pepper
  • 4 Spring onions
  • 1 Can Apricots – 240 ml –
  • 1 tbsp Green, pickled peppercorns
  1. Rinse the meat, pat dry and cut into small schnitzel. Fry in hot oil for about 4 minutes on each side, season with salt and pepper and keep warm.
  2. Drain the apricots and collect the juice. Cut four halves into small cubes and puree the remaining apricots.
  3. Clean, wash and slice the spring onions.
  4. Fry the spring onions in the frying fat for 5 minutes. Add the apricot puree, apricot cubes and green pepper to the spring onions. Season with salt and pepper and heat. Pour the sauce over the meat.
