Turkey Schnitzel with Apricot and Spring Onion Vegetables

- 300 g Turkey schnitzel
- 1 tbsp Oil
- Salt and pepper
- 4 Spring onions
- 1 Can Apricots – 240 ml –
- 1 tbsp Green, pickled peppercorns
- Rinse the meat, pat dry and cut into small schnitzel. Fry in hot oil for about 4 minutes on each side, season with salt and pepper and keep warm.
- Drain the apricots and collect the juice. Cut four halves into small cubes and puree the remaining apricots.
- Clean, wash and slice the spring onions.
- Fry the spring onions in the frying fat for 5 minutes. Add the apricot puree, apricot cubes and green pepper to the spring onions. Season with salt and pepper and heat. Pour the sauce over the meat.
