Apricot Strudel – Vegan

- 250 g Vegan strudel dough (Filo / Yufka)
- 300 g Apricots
- 50 g Breadcrumbs
- 2 cl Apricot liqueur
- 50 g Vegan butter
- 50 g Vegan yogurt
- 2 tbsp Sifted powdered sugar
- Wash and stone apricots. Cut into small cubes. Fold in the breadcrumbs, yogurt and the liqueur. Who wants can also have them sweet – but I like the more sour
- Brush the strudel sheets with liquid (vegan) butter and spread the apricots on the strudel sheets. Roll up the strudel and press down on the edge.
