Apulian-style tomato sauce

Ingredients for 2 servings:

  • 4 beef tomatoes, fully ripe, or pizza tomatoes from the can
  • 1 shallot(s) or onion
  • 1 sprig of celery
  • 2 tbsp olive oil
  • 1 tsp tomato puree or tomato paste
  • ½ tsp sugar
  • ½ bay leaf
  • 1 sprig(s) of thyme
  • 2 garlic cloves
  • salt and pepper
  • 125 ml red wine
  • 1 small chili pepper(s), dried

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Sugo – basic recipe – very tasty!

Halve the tomatoes and chop into large pieces. Finely chop the shallot and chili pepper. Finely slice the celery and sauté in olive oil until translucent, but do not brown. Add the chopped tomatoes, tomato paste, sugar, half a bay leaf, the thyme sprig, the crushed garlic cloves, and the wine. Simmer the mixture at low heat for about 15 minutes. Discard the herbs and season with salt and pepper.
