Ingredients for 1 servings:

  • 3 bell peppers, green or red
  • 4 garlic cloves
  • 8 almonds, peeled
  • 8 tsp olive oil
  • 3 tsp vinegar (fruit vinegar, also apple cider vinegar)
  • Cumin, as desired (approx. 1-2 tsp)

Halve and trim the peppers. Boil in a pot with water and salt for about 20-25 minutes. Drain and let cool slightly. Then puree the pepper halves with the garlic, almonds, olive oil, vinegar, and cumin. Season with salt and freshly ground pepper. Red peppers make a red mojo, while green peppers make a green mojo. For a more eye-catching effect, garnish the mojo with finely sliced ​​pepper strips. It goes great with Canarian potatoes. These are potatoes cooked in water with their skins, lemon slices, and coarse sea salt. Total: 10 points; 1 serving gets 1.25 points.
