Ingredients for 4 servings:
- 1 onion(s), red
- 1 shallot(s)
- 2 slices of cooked ham
- 10 m.-sized eggs
- 1 tsp pepper
- 1 tsp salt
- 1 tsp nutmeg, freshly grated
- 1 tsp chili flakes
- 1 small can of corn
- 2 tomatoes
- 100 g cheese, grated
- 1 bunch of chives
- 200 ml cream
- 2 peppers, green
- oil
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour
Preheat the oven to 180°C (top/bottom heat). Peel the onion and dice it into small cubes. Peel the shallot and slice it into rings. Heat a little oil in a pan and sauté the onion and shallot. Dice the ham and fry it. In a bowl, season the eggs with pepper, salt, and nutmeg and beat them with a whisk or hand mixer until frothy. Add the corn. Wash the tomatoes, remove the stems and seeds, and chop them into small pieces. Finely chop the chives and add them to the egg mixture. Finely chop the peppers and add half. Add half of the cheese and half of the tomatoes. Remove half of the onions, shallots, and ham from the pan. Pour the egg mixture into the pan, let it set slightly, and then loosen the edges. Bake in the oven for 20 minutes. Add the remaining tomatoes, onions, ham, shallots, peppers, and cheese. Then return the pan to the oven for another 5 minutes. Arrange and serve.
