Aromatic paella

Ingredients for 6 servings:

  • 500 ml vegetable stock and some saffron threads
  • 4 tbsp olive oil
  • 1 onion(s), halved and sliced
  • 2 cloves garlic, finely diced
  • 3 tsp turmeric
  • ½ tsp sweet paprika powder
  • ½ tsp cinnamon
  • 400 g rice (long grain rice)
  • 200 g beans, thick, frozen or from the jar
  • 175 g beans, green, frozen
  • 1 small can of corn
  • 150 g peas, frozen
  • 1 pinch of chili powder
  • 1 tsp salt
  • 100 g black olives

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Bring the broth to a boil in a saucepan with the saffron threads. Remove the pan from the heat. Meanwhile, heat the oil in a large cast-iron skillet and add the onion, garlic, turmeric, paprika, cinnamon, and rice. Stir-fry over medium heat until the rice is coated. Pour in the hot broth and add the broad beans, green beans, chili, corn, and salt. Then simmer over low heat for 20 minutes, until the rice is tender, stirring occasionally. Stir in the olives and peas, and season generously with salt and pepper. Serve as soon as the peas are tender.
