Ingredients for 4 servings:
- 500 g tomatoes, pureed
- 200 g cream
- 50 ml white wine
- 50 ml vegetable broth, strong
- 20 g butter
- 1 clove(s) garlic
- 1 onion(s)
- 1 carrot(s)
- 1 stalk(s) Celery
- 1 pinch(s) of sugar
- 1 piece(s) Parmesan rind
- salt and pepper

According to a recipe from my family
Peel the onion, scrape the carrot and celery with a vegetable peeler. Trim and discard the ends of the carrot and the wider end of the celery. Chop everything together with the garlic very finely. Heat a pan, melt the butter and sauté the chopped vegetables. Add the wine and let it almost completely evaporate. Add the stock and reduce it considerably. During this time, stir occasionally with a wooden spoon. Scrape the surface of the Parmesan rind with a knife, add the tomatoes, cream, Parmesan rind and sugar and stir thoroughly. Simmer the sauce over very low heat for 1 hour with the lid on and 1 hour uncovered. While the sauce is simmering, stir several times with a wooden spoon to prevent the Parmesan from burning on the bottom.
