Aronia-pear jam with ginger

Ingredients for 1 servings:

  • 800 g aronia berries
  • 200 ml water
  • 2 pears, cut out, peeled, diced, approx. 400 g
  • 2 cm ginger, finely grated, approx. 12 g
  • 10 g lime juice
  • 600 g gelling sugar 2:1

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes

Boil the washed aronia berries, pear pieces, and grated ginger with the water for 10 minutes. Purée thoroughly with a hand blender for about 10 minutes. Boil briskly with the lime juice and preserving sugar for 4 minutes, then pour into jars. To refine the puree, you can pass it through a sieve or food mill to filter out even the smallest kernels. These leftovers can then be dried and used as a healthy addition to fruit teas. Instead of water, you can also use pomegranate juice to make jam. Aronia berries (chokeberries) are grown as ornamental shrubs and are easily recognizable in autumn by their bright red leaves. The berries have a sweet, sour, and tart flavor.
