incredibly fruity

Since wild pears are usually too small to peel and core, halve or quarter them whole, mix with sugar and citric acid, and let stand overnight. The next day, add cinnamon and cloves to the pears. Bring everything to a boil and then slowly simmer for about 30 minutes until soft. Pass the fruit and juice through a food mill. Mix the Gelfix with the sugar. Bring the fruit pulp to a boil, add the Gelfix-sugar mixture while stirring, and boil gently for about 4 minutes. Be careful, it may splash! Pour the jam into sterilized screw-top jars and let cool.
