Turnip patties with goat's cheese dip and pine nuts

Ingredients for 4 servings:

  • 200 g goat’s cheese
  • 1 dash of cream
  • 2 tbsp pine nuts
  • 3 drops maple syrup
  • 1 garlic clove(s)
  • 400 g swede(s)
  • 200 g potatoes
  • 1 onion(s)
  • 1 egg(s)
  • 2 tbsp flour
  • 2 tbsp clarified butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Roast the pine nuts in a pan without oil until golden brown. Rub a bowl with a halved garlic clove. Mix the cheese and cream in the pan until smooth and season with salt, pepper, cayenne pepper, maple syrup, and some of the pine nuts. Peel the swede, potato, and onion. Grate finely, add the egg and flour, season, and mix everything together. Heat the clarified butter in a pan and spoon the mixture into small heaps. Cook the patties until golden brown on both sides. Drain on kitchen paper before serving. To serve: Pour the goat’s cheese dip into a small bowl and place it on a plate, then place the swede patties in front of it.
