Arugula pasta

Ingredients for 2 servings:

  • 1 m.-sized onion(s)
  • 1 clove(s) garlic
  • 1 pepper, red
  • 100 g cherry tomatoes
  • 60 g arugula
  • 100 g feta cheese (mild sheep’s feta)
  • 200 g pasta
  • Salt, oil, butter, almond sticks or coarsely chopped almonds

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Finely dice the onions and garlic. Cut the bell peppers lengthwise, remove the seeds, and finely chop. If you like it very spicy, you can leave some of the seeds in. Halve the cherry tomatoes. Wash, dry, and roughly chop the arugula. Crumble the feta cheese. Cook the pasta. Heat the oil and butter in a pan. Sauté the onions, garlic, and bell peppers. Toast the almond slivers. Add the cherry tomatoes and fry briefly. Drain the pasta. Mix with the arugula and the mixture from the pan (garlic, etc.). Season with salt and pepper. Sprinkle with the feta cheese.
