Arugula salad with olives, tomatoes and feta cheese

Ingredients for 4 servings:

  • 300 g arugula, ready to cook
  • 10 cherry tomatoes, halved
  • 100 g olives, black, without stones
  • 5 spring onions, cut into fine rings
  • 150 g feta cheese, diced
  • 1 handful of basil
  • 4 tbsp balsamic vinegar
  • 1 tsp apricot jam
  • 2 tbsp orange juice
  • 3 tbsp olive oil
  • salt and pepper

Just the way we always make it and like it!

Arrange arugula, tomatoes, olives, spring onions, and feta cheese on plates. Mix the vinegar, jam, oil, and juice to make a dressing, season with salt and pepper, and drizzle over the salad. Finally, sprinkle with basil leaves. Serve with fresh white bread. If you like, you can also sprinkle some walnuts or pine nuts over the salad.
