Arugula salad with Parma ham

Ingredients for 4 servings:

  • 300 g arugula
  • 200 g Parma ham
  • 50 g pine nuts
  • 150 g Parmesan, freshly sliced
  • 12 cherry tomatoes
  • 1 pkt. Ready-made mix (Salad dressing balsamic vinegar-herbs)
  • 3 tbsp oil
  • 3 tbsp water

Working time approx. 15 minutes; Total time approx. 15 minutes

Fabulous summer salad

Mix the salad dressing with the oil and water and chill. Wash the arugula and trim the stems. Then pat dry and arrange on a plate. Arrange the Parma ham, slice by slice, loosely on the arugula. Arrange the washed cherry tomatoes on the salad as well. Roast the pine nuts without oil in a pan. This only takes a few minutes. Do not remove them from the heat, or they will quickly turn black. Once the nuts have taken on a nice color, scatter them evenly over the salad. Finally, grate the Parmesan cheese over the dressing. Serve the dressing separately so the salad stays fresh longer and guests can adjust the amount themselves.
