Arugula salad with salami

Ingredients for 4 servings:

  • 1 pack of arugula, approx. 125 g
  • 2 slices of toast
  • 50 g salami (Saletti Classic)
  • 200 g cherry tomatoes
  • 40 ml balsamic vinegar, lighter
  • 80 g Parmesan, freshly grated, alternatively Gouda
  • olive oil
  • pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 37 minutes

Clean and wash the lettuce, and cut it into bite-sized pieces. Wash and halve the tomatoes. Then cut the salami and toast into small pieces. Briefly fry the salami and toast in a little oil. Meanwhile, mix the balsamic vinegar, a little olive oil, and a pinch of pepper to make a dressing. Combine all ingredients in a bowl and drizzle with the dressing. Finally, sprinkle with Parmesan cheese.
