Arugula with Gorgonzola

Ingredients for 4 servings:

  • 2 bunches of arugula
  • 1 pear(s)
  • 70 g walnuts
  • 50g Gorgonzola
  • 1 small avocado(s)
  • 1 spring onion(s), finely chopped
  • 4 tbsp oil (walnut) or olive oil
  • 2 tbsp balsamic vinegar or sherry vinegar
  • salt and pepper
  • 1 tsp mustard (pear mustard)
  • possibly sweetener, liquid, if required

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Instead of arugula, lamb’s lettuce also tastes good

Remove the stems from the arugula, wash, and spin dry. Peel and finely dice the pear and avocado. Chop the walnuts. Crumble the Gorgonzola. Make a dressing with the finely chopped spring onion, walnut or olive oil, balsamic or sherry vinegar, pear mustard, pepper, and salt. Season to taste with liquid sweetener, if desired. Place the arugula on a plate. Top with the diced pear, chopped walnuts, crumbled Gorgonzola, and avocado. Pour the dressing over the dressing.
