Asian chicken breast with sugar snap peas

Ingredients for 4 servings:

  • 600 g chicken breast
  • 300 g sugar snap peas
  • 200 ml chicken broth
  • 5 tbsp soy sauce, light
  • ½ tsp cornstarch
  • 4 tbsp sesame oil
  • 2 garlic cloves
  • ½ tsp sambal oelek
  • 2 tsp galangal powder

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 7 minutes; Total time approx. 3 hours 17 minutes

Cut the chicken breast fillets into thin, long strips. Mix the finely chopped garlic, oil, soy sauce, galangal powder, and sambal oelek to make a marinade and marinate the meat for at least 3 hours. Cut the snow peas diagonally into approximately 2-3 cm pieces. Sear the marinated meat in a hot wok for about 1 minute. Then add the marinade. Mix the cornstarch with the broth and add it to the wok along with the snow peas, stirring constantly. Continue stirring for about 5 minutes. Serve with rice.
