  • 350 g turkey schnitzel
  • 3 red bell peppers
  • 4 spring onions

  • 2 garlic cloves
  • 2 tbsp oil
  • 2 tbsp fish sauce
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • 2 tsp palm sugar or brown sugar

Soak the ginger in salted water for 10 minutes, then squeeze it dry to make it milder. Peel and slice into fine strips. Dice the meat. Wash and trim the vegetables. Slice the bell pepper. Peel the onion and slice it into thin rings with the spring onions. Peel and finely chop the garlic. Heat oil in a hot wok. Brown the meat until browned, then remove and keep warm. Fry the onions until translucent. Add the bell pepper, garlic, and ginger and stir-fry for 2-3 minutes. Mix in the fish sauce, soy sauce, vinegar, and sugar. Bring to a boil, stir in the meat and spring onions, and season with salt and pepper. Vegetarian version: Use 400g chickpeas (freshly cooked or canned) instead of the meat.
