Ingredients for 4 servings:
- 1 roll from the day before
- 500 g minced meat, mixed
- 1 egg(s)
- 1 chili pepper(s)
- 100 g mango(s), the pure pulp of which
- 1 tbsp paprika powder
- 7 tbsp oil
- 250 g noodles (egg noodles), Asian
- 250 g carrot(s)
- 1 bunch of spring onions
- 150 g soy sprouts
- Salt
- pepper
- curry powder
Instructions
Working time approx. 50 minutes; Total time approx. 50 minutes
Soak the rolls, then squeeze out the excess water and tear them apart. Mix them with the minced meat and egg. Rinse the chili pepper. Then clean, deseed, and finely chop. Finely dice the mango flesh. Mix both with the minced meat. Season with salt, pepper, curry powder, and paprika. Form them into balls and fry in 5 tablespoons of oil for about 10 minutes, turning occasionally. Cook the noodles according to the package instructions. Peel the carrots and cut into sticks. Peel the spring onions, then rinse and cut into large rings. Fry both in the remaining oil for about 8 minutes, turning occasionally. Rinse the sprouts, drain well, and add to the vegetables for the last 2 minutes. Season with salt and pepper. Drain the noodles. Arrange and serve with the meatballs and vegetables.
