Asian pineapple and cucumber salad

Ingredients for 5 servings:

  • 4 cucumbers
  • 1 can pineapple pieces
  • 1 tbsp sambal oelek
  • ½ bunch coriander leaves
  • 3 dashes rice vinegar
  • 4 dashes of oil (sesame oil)
  • salt and pepper
  • Sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash, peel, and thinly slice the cucumbers. Place them in a bowl. Add the pineapple cubes, sambal oelek, rice vinegar, sesame oil, and chopped cilantro. Season, and finally fold in the pineapple juice.
