Ingredients for 1 servings:

  • 1 kg plum(s)
  • 1 piece(s) ginger, small
  • 3 pieces of star anise
  • 100 ml white wine
  • 1 red chili pepper(s)
  • 1 tbsp five-spice powder
  • 250 g gelling sugar, 2:1
  • 1 salt
  • 50 ml water

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Pit the plums and cut the flesh into small pieces. Peel and finely grate the ginger. Bring the plums and ginger to a boil with the remaining ingredients (without salt) in a saucepan over medium heat, stirring continuously. Remove and reserve the star anise and puree with a hand blender. Then simmer for 3 minutes, stirring continuously. Season with salt and pour while piping hot into jars or ketchup bottles with twist-off lids. Add one star anise to each jar.
