Ingredients for 4 servings:

  • 1 kg roast pork (not too lean, e.g. neck roast)
  • 3 tbsp oil, neutral
  • 500 ml meat broth
  • 2 tbsp soy sauce
  • 4 cloves garlic
  • 1 piece(s) fresh ginger (about 3 cm)
  • 2 tbsp honey (e.g. acacia honey)
  • 2 ½ tsp sambal oelek
  • 3 tbsp sesame oil

Peel and finely chop the garlic cloves and ginger. Place them in a saucepan with the meat broth, soy sauce, honey, sambal oelek, and sesame oil. Bring to a boil and simmer for about 8 minutes. Let cool and blend briefly in a blender. Wash the meat, pat dry, and place it in the marinade. Let it marinate overnight in the refrigerator. The next day, remove the pork roast from the marinade and pat dry. Heat the oil in a saucepan and sear the meat on all sides. Roast in an unheated oven at 90°C (200°F) top/bottom heat on a rack (place a drip tray underneath) for about 3.5 to 4 hours.
