Asian zucchini noodles with fried onions

Ingredients for 1 servings:

  • 2 mushrooms, brown
  • 2 spring onions
  • 1 zucchini
  • 1 garlic clove(s)
  • ½ bunch coriander
  • 2 tbsp fried onions
  • 1 tbsp sesame seeds
  • vegetable oil
  • salt and pepper
  • 2 tbsp soy sauce
  • 1 tsp rice wine vinegar
  • 1 tsp agave syrup

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

vegan and quick to prepare

Using a julienne grater or spiralizer, process the zucchini into noodles. Slice the spring onions and mushrooms, and chop the garlic and cilantro. Whisk together the dressing ingredients. Heat vegetable oil in a pan and sauté the mushrooms for 5 minutes, seasoning with salt and pepper. Stir in the zucchini noodles, spring onions, and garlic and cook for 3-5 minutes, until the zucchini noodles are still slightly firm to the bite. Stir in the dressing and simmer briefly. Transfer the noodles to a bowl and garnish with cilantro, fried onions, and sesame seeds.
