Asparagus and spinach salad

Ingredients for 2 servings:

  • 4 tbsp balsamic vinegar, white
  • 125 g cheese, fresh goat cheese
  • 5 tbsp olive oil
  • salt and pepper
  • 500 g white asparagus
  • 250 g spinach and oak leaf lettuce
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

– Asparagus with a twist –

Bring the vinegar to a boil, then blend it with the goat cheese, 5 tablespoons of warm water, 2 tablespoons of oil, salt, and pepper until smooth. Set aside. Quarter the asparagus lengthwise, heat the remaining oil in a non-stick pan, and fry the asparagus over high heat for 2-3 minutes. Season with salt, pepper, and a pinch of sugar. Wash the spinach and lettuce, spin dry, and arrange on a platter. Add the asparagus and drizzle with the dressing.
