Asparagus cake with pine nuts

Ingredients for 4 servings:

  • 500 g asparagus, fresh (green or white) (alternatively pieces in a jar)
  • 1 tbsp butter
  • 1 tsp sugar
  • 300 g puff pastry
  • Salt and pepper, white, by the mill
  • 3 eggs
  • ¼ liter of milk
  • 3 tbsp parsley, chopped
  • 100 g grated cheese (e.g. Gouda, medium-aged or mountain cheese)
  • 50 g pine nuts
  • Flour, for rolling out

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and trim the asparagus, peel it, and cut it into pieces. Bring a little water to a boil with salt, butter, and sugar. Cover and sauté the asparagus until just tender (do not let it become too soft). Drain the asparagus and let it drain well. Whisk the eggs with the milk, parsley, and cheese, and season with pepper. Roll out the puff pastry thinly on a lightly floured surface and line a large pizza pan with it (trim off any excess dough). Fill the puff pastry pan with two-thirds of the egg, milk, and cheese mixture, spread the asparagus pieces on top, and pour on the remaining mixture. Sprinkle the pine nuts on top. Bake in a preheated oven (225°C) for about 30 minutes.
