Ingredients for 1 servings:
- 1 jar asparagus, approx. 150 g
- 180 ml milk
- 75 g butter
- 125 g flour
- ½ tsp salt
- 1 pinch(s) of sugar
- Cayenne pepper
- 3 eggs
- 160 g Parmesan
- 75 g diced ham

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Simple finger food
Grate the cheese. Cut the butter into small pieces. Cut the asparagus into pieces about 5 mm small. Bring the milk and butter to a boil in a heavy saucepan (be careful, it burns easily). Mix the flour with the salt, sugar, and cayenne pepper. As soon as the butter has melted, remove the pan from the heat and add the flour mixture all at once. Beat vigorously with a wooden spoon for about 1 minute until a thick mixture forms that pulls away from the sides of the pan. Preheat the oven to 180°C (fan oven). Place the batter in a bowl and beat in the eggs one at a time. Fold the Parmesan cheese, diced ham, and asparagus pieces into the cooled batter and mix well. Scoop out small heaps with a spoon and place them on a baking sheet lined with baking paper, about 2.5 cm apart. Bake the balls on the middle rack for about 20-25 minutes until golden brown.
