Apricot jam with lemon balm

Ingredients for 1 servings:

  • 1.2 kg apricot(s), ripe
  • 1 kg gelling sugar
  • 1 lemon(s), the juice
  • 1 tsp citric acid
  • 3 sprigs lemon balm

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 14 minutes

Quarter and pit the apricots. Mix with the gelling sugar, lemon juice, and citric acid. Bring to a boil while stirring. Cook the jam for 3-4 minutes. Follow the instructions on the gelling sugar package. Pick the lemon balm leaves. Stir in the lemon balm leaves and immediately fill the jam into jars. Seal tightly and let cool upside down.
