Asparagus ham salad

Ingredients for 3 servings:

  • 1 kg asparagus, fresh
  • 200 g ham
  • 1 shallot(s) or spring onion
  • 3 tbsp natural yogurt or salad cream
  • 5 tbsp stock (asparagus stock)
  • salt and pepper
  • 1 dashes lemon juice
  • 1 tsp mustard
  • 1 pinch of herbs, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Peel the asparagus as usual, cut into approximately 2-3 cm long pieces, and cook. Make sure the asparagus remains firm to the bite. Be sure to save the stock. Dice the ham and shallots. Combine the salad cream or yogurt, asparagus stock, pepper, salt, mustard, and lemon juice, and season to taste. Fold the ham and onion cubes into the asparagus, pour the dressing over the top, and toss to combine.
