Asparagus in orange sauce

Ingredients for 2 servings:

  • 1 bunch of white asparagus
  • salt water
  • some sugar
  • some butter
  • 2 egg yolks
  • 50 ml orange juice
  • some lemon juice
  • some orange fillets
  • 50 g butter, cold
  • 100 g yogurt, 10% fat
  • some salt
  • Orange zest(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Cook the peeled asparagus in salted water with a little sugar and butter until al dente. Beat the egg yolks with orange and lemon juice in a double boiler until thick and foamy. Add the cut butter and stir gently. Finally, fold in the yogurt and season with salt. Pour the sauce over the asparagus and garnish with some orange zest and orange segments for flavor enhancement.
