Asparagus in vinaigrette

Ingredients for 2 servings:

  • 500 g asparagus
  • 2 eggs
  • 1 tbsp mustard
  • 1 tbsp vinegar
  • 2 tbsp oil
  • Salt
  • pepper
  • Sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the white asparagus (wash the green asparagus) and cook it in salted water with a little sugar. You can also mix green and white asparagus. Hard-boil the eggs, let them cool, peel them, and crush them with a fork. Make a vinaigrette with mustard, vinegar, oil, pepper, and salt. Add the eggs and pour over the asparagus. Let it marinate for a while.
