Asparagus muffins

Ingredients for 12 servings:

  • 500 g asparagus, white
  • 300 g flour
  • 1 packet of baking powder
  • 125 g crème fraîche, with herbs
  • 100 ml oil
  • 1 tsp salt
  • 3 eggs
  • 100 g ham, raw, diced
  • 125 g crème fraîche, with herbs
  • 1 tsp mustard
  • some salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

First, peel the asparagus and cut it into 2 cm pieces. Preheat the oven to 200°C. Sift the flour and mix it with the crème fraîche, oil, salt, and eggs using a mixer until a smooth batter forms. Now fold in the asparagus and ham. Fill each greased muffin cup with 2 tablespoons of the batter and bake in the lower third of the oven for about 25 minutes. For the dip, combine the crème fraîche with the mustard and season with salt. Serve with the muffins.
