Asparagus on toast

Ingredients for 2 servings:

  • ¾ kg asparagus
  • 6 slices of Parma ham or Serrano ham
  • 4 slices of toast
  • 300 ml hollandaise sauce
  • 1 tsp, leveled salt
  • 1 tsp, levelled sugar
  • 1 tsp, heaped butter
  • n. B. water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel the fresh asparagus (cutting off the woody ends, 1.5 cm, of course) and store it in a wet kitchen towel wrapped in a plastic bag in the refrigerator until ready to cook (you can also do this the day before). Fill the asparagus pot with about 3 cm of water, add salt, sugar, and a generous knob of butter, and bring to a boil. Once boiling, add the asparagus and cook for 15 to 20 minutes (depending on the thickness of the asparagus—green asparagus will take about 10 minutes). Meanwhile, toast the slices of bread and top each with three slices of ham. Once the asparagus is cooked, top the slices of toast with the asparagus and pour the hollandaise sauce over the asparagus. A quick and tasty asparagus dish!
