Asparagus pasta pan with bacon and garlic

Ingredients for 4 servings:

  • 1 kg asparagus, white
  • 3 tbsp olive oil
  • 300 g pasta
  • 3 garlic cloves
  • 125 g bacon, lean, e.g. mountain ham
  • 100 g Parmesan, freshly grated
  • 1 tsp oregano
  • 1 tsp basil
  • 1 pinch(s) of sugar
  • some salt and pepper
  • 30 g butter
  • e.g. Parmesan, freshly grated, for sprinkling

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

A quick dish with fresh white asparagus and hearty mountain ham

Peel the asparagus and cut into bite-sized pieces. Dice the garlic and bacon to taste. Bring water for the pasta to a boil, add salt, and add the pasta. Heat the olive oil in a large pan. Add the asparagus with a little sugar and salt and fry briefly, stirring occasionally. Reduce the heat, add the garlic, and cover the pan. Once the asparagus has reached the desired tenderness, add the seasonings, grated Parmesan, and bacon. Add a little more pasta water, if desired. Mix everything well and let it simmer briefly. Stir in the knob of butter. Add the drained pasta to the pan and stir well. Sprinkle the grated Parmesan over the portions and serve.
