Asparagus quiche

Ingredients for 4 servings:

  • 250 g flour
  • salt and pepper
  • 125 g butter
  • Butter for greasing
  • 800 g asparagus, green
  • 1 liter vegetable broth
  • 200 g cheese (Gouda), grated
  • 200 ml cream
  • 4 eggs
  • nutmeg
  • Cayenne pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Knead flour, a pinch of salt, cut butter, and 2-3 tablespoons of cold water into a smooth dough. Wrap in foil and chill for about 1 hour. Meanwhile, trim the asparagus, trim off the woody ends, and pre-cook in hot vegetable broth for 2-3 minutes. Remove and drain. Preheat oven to 200°C. Roll out the dough and place it in a greased springform pan. Pre-bake for 10 minutes. Remove from the oven. Spread the asparagus evenly on top. Whisk together the Gouda cheese, cream, and eggs, season, and pour over the dough. Bake for another 25 minutes.
