Asparagus quiche with arugula

Ingredients for 1 servings:

  • 500 g asparagus, green
  • 250 g wheat flour
  • 1 packet of dry yeast
  • 1 tsp salt
  • Pepper, freshly ground
  • 3 eggs
  • 250 g crème fraîche with herbs
  • 250g mozzarella
  • 100 g arugula
  • 6 slices of Parma ham
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Wash the asparagus and peel the lower third. Cut into pieces about 4 cm long. Mix the flour and yeast in a bowl. Add salt, pepper, eggs, and crème fraîche. Mix to form a smooth dough. Pour the dough into a greased quiche dish and smooth it out. Spread the asparagus pieces evenly on top. Slice the mozzarella and place on top. Bake in a preheated oven at 180°C (top/bottom heat: 160°C) for about 40 minutes. Spread the remaining crème fraîche on top, scatter the chopped arugula on top. Place the ham on top and serve.
