Ingredients for 2 servings:
- 3 stalk(s) white asparagus, peeled
- 3 stalk(s) green asparagus, lower third peeled
- 200 g smoked salmon, cut into strips
- 200 g potatoes, peeled
- 2 tbsp cornstarch
- salt and pepper
- 2 tbsp rapeseed oil

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Quick and easy
Coarsely grate the potatoes and asparagus and toss with the cornstarch, salt, and pepper. Heat the oil in a pan, add the hash brown batter in portions, and flatten. Fry the hash browns for about 3 minutes on each side until crispy. Serve topped with smoked salmon strips.
