Asparagus salad in tomato vinaigrette

Ingredients for 2 servings:

  • 1 bunch of asparagus
  • 2 tomatoes
  • 80 ml olive oil
  • 50 ml balsamic vinegar
  • 3 tbsp chives or wild garlic, freshly chopped
  • salt and pepper
  • Sugar
  • 1 tsp tomato paste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the asparagus as usual. Peel and deseed the tomatoes and cut the tomato flesh into small, even cubes. Mix the oil, vinegar, and tomato paste to make a salad dressing and season with salt, pepper, and sugar. Stir in the diced tomatoes and chives or wild garlic. Add the still-hot asparagus to the dressing and let it simmer for about 10 minutes. Serve warm. This dressing can also be used for other salads.
