Green asparagus with pumpkin seed oil

Ingredients for 4 servings:

  • 1 kg asparagus, green
  • 6 tbsp pumpkin seed oil
  • 1 tbsp balsamic vinegar
  • e.g. Parmesan, in a piece
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the asparagus as needed. Cook in salted water for 3-5 minutes until al dente, drain, and divide among 4 plates. Whisk together the oil, balsamic vinegar, salt, and pepper, and pour over the asparagus. Grate the Parmesan cheese over the asparagus in large shavings.
