Asparagus salad – super simple and super delicious

Ingredients for 4 servings:

  • 500 g asparagus, white
  • 500 g asparagus, green
  • 200 g cooked ham
  • 4 eggs, hard-boiled
  • e.g. mayonnaise, light
  • salt and pepper
  • lemon juice
  • Sugar
  • some butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the white asparagus whole and the green asparagus only at the base. Cook both in boiling water until al dente (add a little salt and butter to the cooking water). Drain the asparagus and cut into 2-3 cm long pieces (reserve the cooking water). Dice the cooked ham, peel the eggs and also dice them, and place everything in a bowl. Now add 3-5 tablespoons of mayonnaise, depending on your taste, and mix. Then add a little of the cooking water for a creamier consistency. Season the salad with pepper, salt, sugar, and lemon.
