Asparagus salad with salmon

Ingredients for 4 servings:

  • 1 kg asparagus, white
  • 400 g salmon fillet(s)
  • 10 ml lemon juice
  • Pinch(s) of salt and pepper
  • 1 tbsp oil
  • 20 ml apple cider vinegar
  • 10 ml maple syrup
  • Cayenne pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Peel the asparagus, cut into bite-sized pieces, and cook in salted water until al dente. Meanwhile, dice the salmon fillet, add lemon juice, season with salt, and pepper, and fry in a pan. Mix the oil, maple syrup, salt, and cayenne pepper to make a marinade and pour it over the asparagus. Arrange the asparagus with the salmon and serve.
