Asparagus salad with strawberries

Ingredients for 4 servings:

  • 200 g feta cheese, diced
  • 80 g walnut kernels, chopped
  • 200 g asparagus, green
  • 250 g white asparagus
  • 50 g arugula
  • 200 g strawberries
  • 50 g natural yogurt
  • 50 ml cream
  • 5 tbsp lemon juice
  • 1 tbsp balsamic vinegar
  • Sugar
  • Salt
  • Pepper, white

Working time approx. 30 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 37 minutes

Trim and halve the green asparagus. Trim and peel the white asparagus, and cut into 6-7 cm long pieces. Blanch the white asparagus in boiling salted water for about 4 minutes. Add the green asparagus and cook for another 3 minutes. Drain and let it drain. Wash the arugula and spin it dry. Mix the feta with the walnuts. Wash, hull, and halve the strawberries. Puree half of them with yogurt, cream, lemon juice, and vinegar, and season with salt, sugar, and pepper. Mix the asparagus with the arugula and strawberries, arrange in a bowl, sprinkle with the walnut feta, and drizzle with the strawberry dressing.
