Asparagus sauce with ham and almonds

Ingredients for 4 servings:

  • 100 g almond(s), flakes
  • 50 g butter
  • 200 g cooked ham (or smoked turkey breast)
  • 200 g cream
  • 1 bunch parsley, chopped
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Melt the butter in a small saucepan and fry the flaked almonds until golden brown (careful: they burn very easily!). Cut the cooked ham into thin strips and add to the almond butter, sautéing briefly. Add the cream and bring to a boil three times (don’t ask me why three times, it’s just how it is). Season with a little salt, pepper, and nutmeg, and stir in the chopped parsley. This is the best asparagus sauce I know, and I could eat it by the heap with just the potatoes.
