Ingredients for 4 servings:
- 2 kg asparagus, white
- 1 handful of thyme
- 1 handful of rosemary
- 3 garlic cloves
- 125 g butter
- salt and pepper
- Sugar
- lemon juice
- Parmesan
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Peel the asparagus thoroughly and place it in a baking dish. Now chop the fresh thyme and rosemary a little finely, add the garlic to taste (I always use about three or four cloves), finely chop or press it and mix it with the herbs. Season the asparagus well with salt, pepper, a little sugar, and a squeeze of lemon juice. Spread the herb and garlic mixture over the asparagus, then place the butter flakes on top. Place the baking dish in the oven and bake the asparagus at 200°C for 20-30 minutes. Depending on how thick it is, it may take five minutes longer. Carefully do the pressure test every now and then. When the asparagus is cooked, serve it while it’s hot and top with freshly grated Parmesan cheese. Depending on how spicy you like it, you can use more or less herbs, garlic, salt, and pepper. You can also cook the asparagus in aluminum foil packets. I always use 8-10 spears per packet, depending on the thickness.
