Ingredients for 4 servings:
- 750 g eggplant(s)
- 1 kg zucchini
- 1 kg tomatoes
- 3 large bell peppers
- 4 large onions
- some parsley
- 4 basil leaves
- salt and pepper
- 1 ½ cups olive oil
- 4 garlic cloves

Wash and slice the eggplant, zucchini, tomatoes, peppers, and onions. Arrange them in a large baking dish, scattering some chopped parsley and basil between them. Season with salt and pepper. Crush the garlic, mix it with the olive oil, and then pour the mixture over the vegetables. Cover the baking dish and bake in a preheated oven at approximately 170°C for about 2 hours. Note: This dish is served cold. It is therefore also ideal as part of a buffet or as a side dish that can be prepared before the main course.
