Asparagus with Wild Garlic Mayonnaise

- 1,5 kg Asparagus white
- 3 tbsp Salt
- 1 tsp Sugar
- 2 piece Egg yolk
- Salt
- Pepper
- 2 tbsp Mustard
- 200 ml Oil
- 1 Splash Lemon juice
- 0,5 bunch Wild garlic fresh
- 4 disc Ham air dried
- Peel the asparagus, put it in the boiling water with salt and sugar and cook for 15 to 20 minutes. Wash and finely chop the wild garlic.
Mix the mayonnaise
- Put the egg yolks, salt, pepper and mustard in a round container and stir slowly and always in the same direction with a whisk. Pour in the oil very slowly and regularly. Refine with a splash of lemon juice and the finely chopped wild garlic.
- Drain the cooked asparagus on kitchen paper and serve. If you like, you can also serve a few slices of ham.
