Asparagus with Wild Garlic Mayonnaise

The perfect asparagus with wild garlic mayonnaise recipe with a picture and simple step-by-step instructions.

  • 1,5 kg Asparagus white
  • 3 tbsp Salt
  • 1 tsp Sugar
  • 2 piece Egg yolk
  • Salt
  • Pepper
  • 2 tbsp Mustard
  • 200 ml Oil
  • 1 Splash Lemon juice
  • 0,5 bunch Wild garlic fresh
  • 4 disc Ham air dried
  1. Peel the asparagus, put it in the boiling water with salt and sugar and cook for 15 to 20 minutes. Wash and finely chop the wild garlic.

Mix the mayonnaise

  1. Put the egg yolks, salt, pepper and mustard in a round container and stir slowly and always in the same direction with a whisk. Pour in the oil very slowly and regularly. Refine with a splash of lemon juice and the finely chopped wild garlic.
  2. Drain the cooked asparagus on kitchen paper and serve. If you like, you can also serve a few slices of ham.
