Ingredients
- 200 g Green asparagus
- 1 small Onion
- 4 small Plum tomatoes
- 20 g Wild garlic
- Parmesan
vinaigrette
- 2 tbsp Olive oil
- 2 tbsp Asparagus broth
- 1 tbsp Balsamic vinegar white
- 1 pinch Sugar
- Salt
- Black pepper from the mill
Instructions
- Cook the asparagus in salted water for about 10 minutes.
- Dice the onion very finely. Core the tomatoes and also finely dice them. Mix the two together.
- Cut the wild garlic into strips.
- Combine all the ingredients for the vinaigrette and whisk well with a whisk.
- Place the asparagus on a plate or on a suitable platter. Pour the tomatoes on top and drizzle with a little vinaigrette.
- Now mix the wild garlic with the rest of the vinaigrette and also pour over the asparagus. Finally, grate some Parmesan cheese on top.
- There was also a smoked trout and baguette.
