Aurora's creamy mashed potatoes with fresh Parmesan

Ingredients for 4 servings:

  • 1 kg potato(s), floury
  • 100 g Parmesan, freshly grated
  • 125 g sour cream, low-fat
  • 125 g crème fraîche with herbs
  • Salt and pepper, pepper, possibly nutmeg
  • possibly nutmeg
  • 1 tsp, heaped vegetable broth, instant
  • n. B. water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

very easy and uncomplicated from the microwave, as a main course or side dish

Peel and chop the potatoes very finely, place them in a microwave-safe dish, and season with plenty of salt and vegetable stock. Pour in water until the potatoes are well covered. Cook with the lid on for 5 minutes at 700 watts. Stir briefly and cook uncovered for another 15 minutes at 700 watts. Drain the potatoes, return them to the dish, and mash with a fork. Then add the sour cream and crème fraîche and mix well. Set the mashed potatoes aside. Finely grate the Parmesan cheese and fold it into the mixture. Season with salt, pepper, and nutmeg if needed, and return them to the microwave for another 2 minutes at 400 watts. Serve soon.
