Microwave mashed potatoes

Ingredients for 2 servings:

  • 500 g potatoes, mostly waxy
  • 200 ml soy milk (soy drink)
  • 2 tbsp margarine
  • 1 tsp, leveled salt
  • some nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 11 minutes; Total time approx. 26 minutes

vegan

Wash and peel the potatoes, and place them in a suitable microwave container. Cover and heat at 600 watts for about 10 minutes. Pour in the milk, margarine, salt, and a pinch of nutmeg, and mash everything. Then return to the microwave for another minute at 600 watts. Serve.
