Ingredients for 4 servings:
- 1 roll(s) of goat’s cheese (200 g)
- 200 g mixed salad, e.g. lamb’s lettuce, frisee
- 250 g cherry tomatoes
- 2 avocados
- 150 ml grapefruit juice
- 2 tbsp maple syrup
- 1 tsp peppercorns, pink
- 6 tbsp balsamic vinegar, light
- 4 tbsp olive oil
- Salt

very simple and yet something special
Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Slice the goat cheese and place it in an ovenproof dish. Halve the tomatoes and add them to the cheese. Combine the grapefruit juice with maple syrup and peppercorns and drizzle the mixture over the cheese and tomatoes. Melt in the oven for 5-8 minutes. Peel the avocados and cut the flesh into thin wedges. Trim the salad. Arrange the lettuce and avocados on plates and top with the cheese and tomatoes. Combine the liquid from the dish with the vinegar and oil, season with salt, and drizzle over the salad.
