Ingredients for 4 servings:
- 1 avocado(s)
- 1 lemon(s)
- 1 tomato(s)
- 2 cloves garlic
- 1 tsp salt
- ½ tsp cayenne pepper
- n. B. herbs, e.g. coriander, parsley
- 1 onion(s)
- ½ cup(s) flour
- 1 egg(s)
- 1 cup(s) breadcrumbs
- ½ liter oil, for frying
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 30 minutes
Halve the avocado, remove the stone, and place the flesh in a bowl. Squeeze the lemon and add the juice to the avocado. Mash with a fork until smooth. Dice the tomato, peel the garlic, and finely dice it. Add it to the avocado mixture along with the salt, cayenne pepper, and chopped herbs and stir in. Peel the onion and cut into approximately 1 cm thick rings, pressing the individual rings apart. Place the onion rings next to each other on a plate lined with baking paper or greaseproof paper and fill with the avocado mixture. Place the plate in the freezer for 1 to 2 hours, until the mixture has solidified. Then remove the avocado slices from the freezer. Heat the oil in a high-fat frying pan to approximately 170°C. If you have a deep fryer, you can of course use that. Bread the frozen slices in the traditional way, i.e. roll them one after the other in flour, beaten egg, and breadcrumbs. Then add them to the hot oil and fry until golden brown. Remove the finished patties from the oil and place them on kitchen paper to drain. Lightly salt again to taste, drizzle with a little lemon juice, and serve warm. If you like, you can add a dip or sour cream. You can also substitute a lime for the lemon.
