Avocado banana bread

Ingredients for 1 servings:

  • 2 bananas, ripe
  • 1 avocado(s), ripe
  • 2 eggs (vegan alternative see note in text)
  • 75 ml milk, here almond drink
  • 50 g coconut oil
  • 35 g maple syrup
  • 110 g flour
  • 45 g oat flakes
  • 40 g walnuts, chopped
  • 1 tsp baking powder
  • 1 tsp baking soda, alternatively baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 25 minutes

very healthy and super tasty

Preheat the oven to 180°C (top/bottom heat). Line a 22cm loaf pan with baking paper. Mash the bananas in a bowl. Halve the avocado, remove the pit, and mash it finely. Add the eggs, milk, melted coconut oil, and maple syrup and mix well. Mix the dry ingredients together in a second bowl. Add the wet ingredients and fold in well. Pour the batter into the prepared pan. Bake in the preheated oven on the middle rack for about 60-70 minutes. If the surface of the bread is browning too much, cover it with aluminum foil after about 45 minutes. Remove from the oven and let cool slightly. In this delicious avocado bread, the avocado is hidden inside the banana bread instead of on top. It’s ideal for breakfast, as a snack, or as a healthy alternative to cake. Note: A vegan version can also be used instead of the eggs. For the “chia eggs,” simply mix 2 tablespoons of chia seeds with 6 tablespoons of water.
